Ingredients:

Directions:

  1. In a large saucepan, heat the olive oil and butter. Once hot, add the onions and saute for 3 - 5 minutes. Season with salt, Chipotle and cayenne pepper.
  2. Stir in the stew meat, ground beef, chili powder, cumin, crushed red pepper, and oregano. Brown the meat for 5-6 minutes.
  3. Stir in the garlic, crushed tomatoes, tomato paste, and beef stock. Bring the liquid to a boil and reduce to a simmer.
  4. Simmer the liquid, partially covered for 1 1/2 hours. Be sure to stir and skim off the fat occasionally.
  5. Mix the flour and water together. Slowly stir the mixture into the saucepan, add the beans and continue to cook for about 30 minutes. Season again with salt and cayenne pepper if necessary. Serve hot !
