Ingredients:

Directions:

  1. Sautee chicken in a little olive oil (1-1.5 T) until cooked through.
  2. In separate pan, sautee carrots in remaining olive oil to soften. Add celery after a few minutes. Take carrots and celery off heat and place in mixing bowl along with other frozen veggies of choice. Add chicken and cream of chicken soup and toss to mix.
  3. Mix pie crust according to directions on box. Separate and roll into two square pieces. Lightly grease 9x9 baking dish and line bottom with one crust. Fill with chicken and veggie mixture and cover the top with other pie crust. Poke vent holes in top crust.
  4. Bake at 375 for 45 minutes or as long as it takes for the crust to cook all the way through.
  5. You could brush the top with butter, or egg to encourage browning and crispness.
