Ingredients:

  • 1 fat hen , cooked until tender
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup milk
  • 2 cups flour
  • 1 tsp salt
  • 2 tbsp shortening
  • 1 cup milk
  • 1 egg

Directions:

  1. Filling: Remove chicken from bones.
  2. Cut meat into bite sized pieces.
  3. Set aside.
  4. Melt butter; stir in flour.
  5. Blend in chicken broth and milk, and cook until smooth and sllightly thickened.
  6. Add chicken to gravy.
  7. Spread vegetables on bottom of greased baking pan.
  8. Pour chicken gravy over top.
  9. Crust: Mix dry ingredients together.
  10. Cut in shortening until mixture resembles peas.
  11. Stir in milk and mix well.
  12. Add egg and blend.
  13. Roll out dough, then spread over chicken.
  14. Cut slits in dough to permit steam to escape.
  15. Bake at 425F for 20 to 30 minutes or until crust is brown.
