  2. Cup Progresso bread crumbs
  3. Teaspoon dried oregano
  4. /2 teaspoon garlic powder
  5. Teaspoons paprika
  6. /2 teaspoon salt
  7. /2 teaspoon black pepper
  8. Mayo
  9. (6 ounce) skinless boneless chicken breast halves, pounded to 1/2-inch thickness
  10. Olive oil cooking spray
  11. Jar good-quality marinara sauce (about 3 1/2 cups)
  12. /4 cup (3 ounces) shredded part-skim mozzarella cheese
  13. Tablespoons (1/2-ounce) shredded Parmesan
  14. Directions
  15. Preheat the oven to 350 degrees F.
  16. In a medium bowl, toss the crumbs with oregano, garlic powder, paprika, 1/4 teaspoon salt and 1/4 teaspoon pepper. Pound chicken flat using meat tenderizer and suran wrap to prevent splatter. Thinly spread mayo over chicken breasts on both sides.
  17. Place breaded breasts in a glass baking dish and spray on each side with cooking spray, about 5 seconds total per side. Bake breasts until cooked though and crumbs are browned, about 15 minutes. Top with marinara sauce, mozzarella and parmesan and return to oven for an additional 10 minutes, until cheese is bubbling.
