Chicken in the Limelight

Ingredients:

  • 3 lbs chicken
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1/3 cup flour
  • 1/2 tsp paprika
  • 1 lime

Directions:

  1. Preheat oven to 350.
  2. Grate lime peel and set it aside.
  3. Squeeze lime juice over chicken and shake chicken in flour salt and paprika.
  4. Brown chicken in olive oil.
  5. Arrange in single layer in baking dish.
  6. Combine lime peel and brown sugar and sprinkle mixture over the chicken.
  7. Add wine and broth.
  8. Cover and bake until tender 40-45 minutes.
