Ingredients:

Directions:

  1. Slice the chicken breasts widthwise into very thin slices.
  2. Heat the olive oil in large skillet.
  3. Add the onion and cook until softened but not browned.
  4. Add the garlic and cook for an additional 30 seconds.
  5. Add the sliced chicken to the skillet and cook gently for 5 - 10 minutes until all are lightly browned and the chicken is tender.
  6. Add grated lemon rind and the juice of 1 lemon and let it bubble.
  7. Remove the skillet from the heat, stir in the parsley and season to taste with salt and pepper.
  8. Transfer the chicken to a warm platter. Sprinkle some more lemon rind and serve with lemon wedges for squeezing over the chicken.
  9. Serve with crusty bread for mopping up the lemon and garlic juices.
