Ingredients:

  • 1/2 cup shortening
  • 1 cup sugar
  • 1/2 cup milk
  • 2 cups of cake flour
  • 2 1/2 tsp baking powder
  • 2 1/2 tsp salt ( ok , this seems like about 1 1/2 tsps too much)
  • 1/2 cup chopped nuts
  • 1 tsp vanilla
  • 4 tbsp cherry juice
  • 3 egg whites , beaten stiff

Directions:

  1. Cream shortening and sugar until fluffy
  2. Add milk alternately with the sifted dry ingredients
  3. Add the nuts, cherries, vanilla and cherry juice
  4. Fold in egg whites
  5. Bake in a greased 10 tube pan for 45 to 60 minutes
