Cherry Nut Brittle

Ingredients:

  • 1 1/2 cups sugar
  • 1/3 cup water
  • 2 1/2 cups salted mixed nuts
  • 2 tbsp butter or 2 tbsp margarine
  • 1 tsp vanilla

Directions:

  1. In a 3-quart saucepan, combine sugar, corn syrup and water.
  2. Stir over medium heat until sugar dissolves.
  3. Continue cooking without stirring, till candy thermometer reaches hard crack stage (300 F.).
  4. Meanwhile, in 13x9x2-inch baking dish, combine nuts and cherries.
  5. Heat in 350 oven for 10 minutes; keep warm.
  6. When syrup reaches 300 F.
  7. Stir in nuts, cherries, butter and vanilla until butter melts.
  8. Immediately pour onto buttered jellyroll pan.
  9. Spread quickly, with wooden spoon.
  10. Place pan on cooling rack.
  11. Let stand about 1-1/2 hours.
  12. Loosen and break into pieces.
