Ingredients:

  • 1/2 cup flour
  • 1/4 tsp baking soda
  • 1 pinch salt
  • 1/2 cup sugar
  • 1 large egg yolk
  • 3/4 cup strawberry
  • 3/4 cup blueberries
  • 3/4 cup raspberries
  • 3/4 cup blackberry
  • 3/4 cup rhubarb
  • 1 tbsp cornstarch
  • 1/2 cup sugar

Directions:

  1. Preheat oven to 375.
  2. Gently combine (so you don't smash the fruit) all fruit.
  3. Filling ingredients and set aside.
  4. Combine baking soda, salt and flour.
  5. Cream together.
  6. Butter and sugar until light and fluffy.
  7. Beat in egg.
  8. Yolk and vanilla.
  9. Add dry ingredients with a spatula.
  10. Place fruit filling in an 8 inch non-metallic baking pan.
  11. Evenly distribute tablespoon sized clumps of cobbler.
  12. Across the fruit.
  13. Bake 40 minutes or until crisped and bubbling.
  14. Let cool.
  15. A bit but serve warm.
  16. Great with ice cream.
