Directions:

  1. Cook the potatoes in salted water for 20 minutes or until done. Drain the potatoes and mash the potatoes using an electric beater or a potato masher until smooth, without lumps. Add the melted butter, white flour, 2 eggs, cheese, cayenne, nutmeg, salt and pepper and continue beating until all the ingredients are well mixed.
  2. The potatoes will be thick and fairly dry.
  3. Grease a 12 muffin pan slightly with the melted butter, pam or cooking oil. Use an ice cream scoop or a large spoon to fill each muffin tin 3/4 of the way. Brush the top of the potatoes slightly with melted butter.
  4. Cook in a 400 degrees oven for 15 to 20 minutes until the bottom and sides are crips. Then place the potatoes on the top oven rack and broil the top of the potatoes for 4 to 5 minutes, until crisp and slightly browned.
  5. Note: The outside of each croquette should be browned and crisp and the inside white and creamy.
  6. Serve immediately OR they will keep in the refrigerator a few days..
  7. NOTE: I tried freezing them but it did not work out well.
