Cheesy Baked Spinach and Eggs

Ingredients:

Directions:

  1. Set oven to 350 degrees.
  2. Butter a medium casserole dish.
  3. In a large saucepan melt butter over medium heat; add in onion and garlic, saute for about 3-4 minutes.
  4. Add in fresh spinach and seasoned salt, reduce the heat to low.
  5. Cover and steam for about 5 minutes; remove from heat.
  6. Sprinkle 1 cup (or more) mozza cheese into the bottom of the casserole dish, then spoon the spinach mixture over the cheese.
  7. Sprinkle the paprika, nutmeg and black pepper over the spinach.
  8. In a medium bowl beat the eggs with cream and cayenne pepper (if using) pour over the spinach mixture.
  9. Top with 1/3 cup grated Parmesan cheese (or to taste) then sprinkle with remaining 1 cup mozzarella cheese.
  10. Bake uncovered for about 15-20 minutes or until the cheese bubbles.
  11. Let stand 5 minutes beeefore cutting.
