Ingredients:

  • 1/2 cup shortening
  • 3/4 cup milk

Directions:

  1. Combine flour and shortening; cut in shortening with a pastry blender until mixute resembles coarse meal. Add cheese and milk, stirring until dry ingredients are moistened. Turn dough out onto a lightly floured surface , and knead lightly 4 or 5 times.
  2. Roll dough to 1/2 thickness and cut with a 2 biscuit cutter. Place on an ungreased baking sheet and bake in a preheated 450 degree oven for 10-12 minutes.
  3. BACON CHEESE BISCUITS: Increase the milk to 3/4 c plus 2 Tbps. Stir in 1/4 c chopped green onion and 3 to 4 strips of precooked, crumbled bacon into the biscuit dough as the milk is added. Makes about 18 biscuits.
  4. ZIPPY CHEESE BISCUITS: Increase the milk to 3/4 c plus 2 tablespoons Stir 1/2 c chopped pecans amd 1/4-1/2 tsp red pepper into biscuit dough as milk is added. Makes about 18 biscuits.
