Ingredients:

Directions:

  1. Preheat oven to 350.
  2. Grease a loaf pan with cooking spray.
  3. Mix ground turkey,and the next 10 ingredients in a large bowl.
  4. Meanwhile heat olive oil in a sautee pan.
  5. Add onions, saute 3-5 minutes until softened.
  6. Add zucchini and saute for a few minutes more, stirring.
  7. Season with salt, pepper and add peas, saute for 1 minute, set aside to cool.
  8. Put half of the turkey mixture into the greased loaf pan.
  9. Spoon zucchini/pea mixture over, to cover.
  10. Add remaining turkey mixture over, smoothing with a spatula.
  11. Bake for 1 hour, until juices run clear.
  12. Garnish with 2 sage leaves and extra dried cherries if desired.
  13. Slice and serve.
