Ingredients:

Directions:

  1. Add all ingredients except salt and pepper to a 5 L saucepan.
  2. Cover and simmer until vegetables are tender.
  3. Strain off and reserve the liquid.
  4. Place vegetables in a food processor and puree.
  5. Add pureed vegetables and the reserved liquid back into the pot, add salt and pepper and reheat.
