Carrot-Raisin Nut Cookies

Ingredients:

  • 1/2 cup brown sugar , packed
  • 1 egg
  • 2 tsp vanilla
  • 3/4 cup coarsley chopped carrot
  • 1 1/4 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2-1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp clove
  • 1 cup raisins

Directions:

  1. Set oven to 350 degrees.
  2. Line baking sheet/s with parchment paper.
  3. In a bowl cream butter with brown sugar until fluffy.
  4. Add in egg and vanilla; beat until well blended.
  5. Mix in carrots and coconut.
  6. In a small bowl mix the flour with salt, baking powder, nutmeg, cloves and cinnamon; add to the creamed mixture and mix until combined.
  7. Mix in raisins and nuts.
  8. Drop large spoonfuls on prepared baking sheet/s.
  9. Bake for about 10-12 minutes or until browned.
