  1. RINSE GRREN ONION AND CUT INTO THIN DIAGONAL RINGS.
  2. SLIT OPEN THE CHILI PEPPER, REMOVE THE SEEDS, TRIM AND CUT INTO THIN STRIPS.
  3. PEEL AND CHOP GARLIC.
  4. HEAT OIL AND SAUTE GREEN ONION, CHILI PEPPER,AND GARLIC UNTIL TRANSLUCENT.ADD COCONUT MILK
  5. REMOVE PEEL AND CORE FROM PINEAPPLE, DICE VERY FINELY, AND STIR INTO SAUCE.
  6. SEASON TO TASTE WITH SALT AND PEPPER,TRANSFER TO A SMALL BOWL AND CHILL UNTIL SERVED.
