Ingredients:

  • 4cupstorn romaine lettuce
  • 1poundmedium shrimp, cooked and peeled
  • 1cupcubed peeled papaya
  • 1cupcubed fresh pineapple
  • 1/2cupchopped peeled avocado
  • 1/2cupchopped red or green bell pepper
  • cuporange-soy vinaigrette (below)
  • 1/4cupchopped unsalted cashews, toasted
  • 1/2cuporange juice
  • 1/2cuppineapple juice
  • 1tablespoonminced fresh parsley
  • 2tablespoonsfresh lime juice
  • 2tablespoonslow-sodium soy sauce
  • 1tablespoonextra-virgin olive oil
  • 1tablespoondark sesame oil
  • 2teaspoonssugar
  • 1teaspoonlemon pepper

Directions:

  1. Arrange lettuce on a serving platter.
  2. Spoon the shrimp down center of platter; arrange papaya, pineapple, avocado, bell pepper, black beans, and cheese in rows on either side of shrimp.
  3. Drizzle Orange-Soy Vinaigrette over salad; sprinkle with cashews.

  5. Combine all ingredients in a jar; cover tightly, and shake well.
