Caramel Apple Puffed Pancake

Ingredients:

  • for apple filling
  • 3 medium apples
  • 1/2 tsp vanilla
  • 3 tbsp brown sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1 tbsp butter
  • for pancake
  • 3 eggs
  • 3/4 cup whole milk
  • 2/3 cup flour
  • 1 tbsp butter

Directions:

  1. Preheat oven to 425 degrees, set oven rack in the middle of the oven.
  2. Peel apples and slice into thin pieces.
  3. Oss with vanilla, cinnamon, lemon juice and brown sugar.
  4. Melt butter over medium heat in saucepan.
  5. Add apple mixture and cook about 5 minutes, or until apples have softened.
  6. Place 8 inch round pie pan in oven.
  7. Using mixer, beat eggs, milk, flour and sugar together in medium bowl.
  8. Melt tablespoon butter in pie pan.
  9. Pour pancake batter into pan.
  10. Scoop apple mixture over pancake.
  11. Bake 15-20 minutes, or until top is golden and puffy.
