Ingredients:

  • the pastry
  • 1/2 tsp salt
  • 5 tbsp ice water
  • the filling
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tbsp hot water
  • 1/2 cup raisins

Directions:

  1. In food processor, place flour, salt, and butter. Pulse four or five times to get pea-sized butter bits.
  2. Run processor while adding in ice water. A dough ball will form.
  3. Wrap ball in plastic wrap and refrigerate for 15 minutes
  4. Between two sheets of wax paper roll out dough to 1/8 inch.
  5. Using a 3 inch diameter biscuit cutter, cut out rounds of dough and place them into well-greased medium size muffin tins, pressing them in to form a cup.
  6. Place 10 raisins in the bottom of each shell.
  7. To make filling:
  8. In a bowl, combine sugars, eggs, vanilla, butter and hot water.
  9. At 350 degrees for 12 minutes.
