Canadian Lemon Bread

Ingredients:

  • 1/2 cup butter or 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 cup milk
  • 1/2 tsp salt

Directions:

  1. Cream butter and sugar.
  2. Add 2 beaten eggs.
  3. Sift flour and baking powder.
  4. Add salt.
  5. Add lemon peel to the butter.
  6. To this add flour mix.
  7. Stir in milk and blend well.
  8. Bake in loaf pan at 350 for 50 minutes to 1 hour.
  9. Add powdered sugar to lemon juice.
  10. When bread is done, prick top with a fork and dribble lemon juice and sugar mixture over top.
