Ingredients:

  • 2 tbsp oil
  • 2 tbsp butter
  • 1 1/2 cups chopped onions
  • 1 3/4 cups cooked ham, diced
  • 3/4 tsp thyme
  • 2 tsp cajun seasoning or 2 tsp creole seasoning
  • 1 (4 oz) can chopped green chilies

Directions:

  1. Saute onions in oil and butter over medium high heat until golden.
  2. Add ham, potatoes, oregano, thyme, and cajun seasoning.
  3. Cover and cook over medium heat 8 minutes.
  4. Remove cover, add green chilis and cook until potatoes are tender and browned and crusty.
  5. Stir, scraping up browned bits and adding more oil if necessary.
  6. Add green onions, adjust seasonings and cook 2 minutes.
