Butterscotch Chewy Cake

Ingredients:

  • 4 medium eggs
  • 2 cups firmly packed brown sugar
  • 1 tbsp butter
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups chopped nuts
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350 F. Grease and lightly flour a 13x9 inch pan.
  2. Beat eggs with beater in top of a double boiler just until blended.
  3. Blend in brown sugar and butter. Place over rapidly boiling water, stirring constantly, just until hot. About 5 mins. Remove from heat.
  4. Sift together flour and baking powder. Add all into mixture and mix until well blended.
  5. Stir in nuts and vanilla.
  6. Turn into pan and bake for 25-30 mins.
