  1. Mix the flour and salt together, sifting if you want. Stir in the buttermilk until mixture is all moistened. Add the melted butter. Beat the egg whites until stiff. Beat the egg yolks and add them to the buttermilk mixture. Dissolve the baking soda in the boiling water and add to the batter. Fold in the egg whites. Spoon into a preheated waffle iron. Bake until done. Makes 6-8 waffles depending on the size of the wafle iron. A Belgian style iron is the best. Serve with maple syrup. You can also serve with strawberries or blueberries or pecans or macadamia nuts for an added touch. You can also mix blueberries, macadamia nuts or mini chocolate chips into the batter for a new variation. Enjoy!
