Directions:

  1. Heat oven to 350 degrees. Spray 2 8-1/2 x 4-1/2 pans with spray.
  2. Whisk dry ingredients together.
  3. With electric mixer, beat butter and brown sugar until fluffly, add eggs one at a time and then vanilla. Mixer on low, alternately add flour mixture and buttermilk,
  4. Mixing just until incoroated.
  5. Divide into 2 pans, smooth tops and sprinkle with sliced ginger.
  6. Bake 50-60 min. Let cool in pans 10 min. before transferring to wire rack.
