Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup sugar , plus
  • 2 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sour cream
  • 1 large egg
  • 1 tsp vanilla or 1 tsp almond extract

Directions:

  1. Set oven to 400 degrees.
  2. Set oven rack to second-lowest position.
  3. Grease 12 regular size muffin tins or line with paper muffin liners.
  4. In a bowl sift together flour, 1/2 cup plus 2 tablespoons sugar, baking powder, baking soda and salt.
  5. In another bowl whisk together melted butter with sour cream, egg and vanilla or almond extract.
  6. Stir in the butter mixture (along with any ingredients you might be adding) into the flour mixture; stir with a wooden spoon JUST until combined.
  7. Divide the batter between each muffin tin.
  8. If you want you can sprinkle with a topping.
  9. Bake for about 20 minutes or until muffins test done.
