Broccoli Souffle

Ingredients:

  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup milk
  • 1/4 tsp salt
  • 1/2 cup finley chopped onion
  • 1/8 tsp pepper
  • 1/2 lb (2 cups) grated american cheese
  • 1 (10 oz. ) package. frozen chopped broccoli

Directions:

  1. Pre heat oven to 350
  2. Melt butter
  3. Stir in flour to make a smooth paste
  4. Add milk; salt and pepper
  5. Cook for 5 min.
  6. Add cheese and stir till melted
  7. Fold in partially thawed broccoli and onion
  8. Fold in well beaten egg yolks
  9. Turn off heat
  10. Beat whites till stiff but not dry
  11. Lightly fold in egg whites into mixture
  12. Bake in a dish which is set in a pan of water in the middle of oven for 1 hour at 350.
