Briannas Clam N Shrimp Chowder

Ingredients:

Directions:

  1. Place potatoes in large pot & cover with water
  2. Add 1 tsp salt
  3. Lay carrots on top of potatoes
  4. Boil until potatoes & carrots are fork tender
  5. While the potatoes & carrots are cooking, melt 1/4 cup butter in a skillet
  6. Add the diced onions & celery to the skillet & saute until soft - set aside
  7. When the potatoes & carrots are tender, remove from heat
  8. Remove carrots to a separate plate & set aside
  9. Drain potatoes, reserving the water
  10. Return potatoes to the pot.
  11. Push 1/2 of the potaoes to one side of the pot & mash coursely
  12. Run a sharp knife through the other 1/2, cutting into small whole pieces
  13. Add the sauted onions & celery to the pot, including the butter they were sauted in
  14. Add both milks, clams & the juice, shrimp & reserved potato water
  15. Cut the carrots slices into small pieces & add to pot
  16. Mix all together & return to stove on medium heat
  17. Heat until just before boiling, stirring occasionally
  18. Season with salt & pepper to your taste
  19. Mix flour & water together to make a thin paste & stir into soup to thicken
  20. Thicken to your preference
  21. NOTE:- Many types of fish can be used to vary this dish. Crab, pieces of cut up fish fillets etc. Or just add more types to the recipe above & call it a Seafood Chowder. I do quite often. Just depends what I have on hand at the time.
