Ingredients:

Directions:

  1. In a large, resealable plastic bag, combine the cornmeal, cornstarch, garlic salt and cumin.
  2. In a shallow bowl, beat the eggs and water.
  3. Flatten chicken to approximately 1/4-inch thickness.
  4. Dip into egg mixture, then place in the bag and shake to coat.
  5. In a large skillet, heat the oil.
  6. Cook chicken for 4 minutes on each side.
  7. Top each piece of chicken with 1/4 cup cheese and 3 slices of avocado.
  8. Cover and cook until chicken juices run clear and cheese is melted.
  9. Garnish with sour cream and green onions.
