Ingredients:

Directions:

  1. Combine prunes, sugar and water then slowly roast in the oven.
  2. Blend and puree prune mixture then flavor with rum.
  3. Whip egg whites and granulated sugar to an oily constancy.
  4. Beat egg yolks until smooth then add to whisked egg whites.
  5. Carefully fold in flour.
  6. Heat two omelet pans and grease with unsalted butter.
  7. Pour in batter then carefully bake on low heat for 3 minutes.
  8. Turn omelets and slowly bake other side.
  9. Heat prune mix then beat with a small quantity of cream until smooth.
  10. Coat omelets with prune mix then fold and serve on plates dusted with powdered sugar.
