Bluecheese And Bacon Potato Salad

Ingredients:

Directions:

  1. Steam new potatoes, let them cool slightly, and quarter
  2. Them.
  3. In a large bowl, combine warm potatoes with wine, chicken broth, parsley and scallions, tossing mixture gently.
  4. Let cool.
  5. Then crumble Bleu cheese, add vinaigrette dressing and toss mixture gently.
  6. Chill overnight.
  7. Transfer salad to a salad bowl.
  8. Sprinkle with crumbled bacon and serve at room temperature
