Ingredients:

  • 1 cup flour
  • 3/4 cup white sugar
  • 1-1/4 tsp baking powder
  • 1/3 cup milk
  • 1/4 cup shortening
  • 1 egg
  • 1/2 tsp lemon extract
  • 1-1/2 cup blueberries
  • 1-1/4 cup ricotta cheese
  • 1/3 cup sugar
  • 1/4 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees. Grease 9 square baking dish.
  2. In large bowl,stir together flour,3/4c sugar and baking powder. Add the milk,shortening,1 egg and lemon extract and use electric mixer to mix on low speed for 1 min.,then medium speed for 1 min. Pour batter into prepared pan,and spread evenly. Sprinkle blueberries over batter.
  3. In medium bowl,stir together 2 beaten eggs,ricotta cheese,1/3 c sugar and vanilla. Spoon mixture over the blueberries and spread evenly.
  4. Bake 55 to 60 mins until knife inserted near center comes out clean, Cool completely before cutting into squares and serving.
