Blueberry Lemon Scones

Ingredients:

  • 2 cups flour
  • 4 tbsp. sugar
  • 1 tbsp. baking powder
  • 3/4 tsp. salt
  • 3/4 stick unsalted butter
  • 2 cups blueberries
  • 1/3 cup heavy cream
  • 2 eggs

Directions:

  1. Mix flour, sugar, baking powder, and salt
  2. Cut up butter into small pieces and mix into dry ingredients
  3. Add blueberries and lemon zest
  4. Lightly beat eggs and cream
  5. Add egg/cream mixture
  6. Gently mix until everything is moist (try not to break too many blueberries)
  7. Form a large square with the dough and cut into triangles. (The number will vary depending on how big your square is. I usually get 9.)
  8. Put triangles on a baking sheet lined with parchment paper
  9. Brush triangles with more cream and sprinkle sugar on top (Optional)
  10. Bake for 20 minutes at 400F (until slightly brown)
