Blueberry Lattice Bars

Ingredients:

  • 1/2 cup sugar
  • 1 egg
  • 2 3/4 cups flour
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1 cup sugar
  • 3 tbsp cornstarch

Directions:

  1. Cream butter and sugar.
  2. Add egg, flour, vanilla and salt and mix well.
  3. Cover and refrigerate for 2 hours.
  4. Meanwhile, in a saucepan, bring the blueberries, sugar and cornstarch to a boil.
  5. Stir and cook for 2 minutes or until thick.
  6. Roll 2/3 of the dough into a 14 x 10 rectangle.
  7. Place in greased 13 x 9 baking dish.
  8. Top with filling.
  9. Roll out remaining dough to 1/4 thick.
  10. Cut into 1/2 wide strips and make a lattice crust over filling.
  11. Bake at 375 degrees for 30- 35 minutes or until top is golden brown.
  12. Cool on wire rack.
  13. Cut into bars.
