Blueberry Bottom Cake

Ingredients:

  • 1 1/3 cups flour (plus 3 tbsp)
  • 3/4 cup brown sugar
  • 1/4 tsp salt
  • 1/4 cup butter
  • 1 egg
  • 3/4 cup milk
  • 1 tsp vanilla
  • 3 cups blueberries
  • 1/2 cup sugar

Directions:

  1. Mix dry ingredients, add butter and mix until crumbly.
  2. Add milk, vanilla and eggs, mix until blended, do not over mix.
  3. Grease an 8 square pan.
  4. Mix blueberries, sugar and zest and put in pan.
  5. Top with cake batter.
  6. Cook 45 - 50 minutes at 350.
  7. Sever warm or cold.
