Blackberry Cornmeal Pancakes With Orange Butter

Ingredients:

Directions:

  1. Combine flour, cornmeal, sugar, baking powder, baking soda, salt and cinnamon then set aside.
  2. Beat eggs then add buttermilk and 1/3 cup melted butter.
  3. Add egg mixture to flour mixture and stir just until moistened then fold in blackberries.
  4. Spoon 1/4 cup of the batter onto a greased griddle.
  5. Cook until both sides are light brown on the inside and crisp on the outer edges.
  6. Repeat with remaining butter then serve with orange butter
  7. To make butter combine butter, powdered sugar and grated orange peel and beat until fluffy.
  8. Beat in orange liqueur, orange juice, vanilla, nutmeg and salt.
