Ingredients:

Directions:

  1. Cover tomatoes with 1/2 c.
  2. Boiling water, let stand for 5 minutes.
  3. Drain tomatoes, reserving water.
  4. Slice tomatoes 1/2 inch thick.
  5. Rinse beans, place in bowl with tomatoes and scallions.
  6. Combine olive oil, balsamic vinegar, 4 tbsp.
  7. Of tomato water, and salt and pepper, whisking together.
  8. Pour over beans, tossing lightly.
