Ingredients:

  • 1/4 to 1/3 cup granulated sugar (use the larger amount if you want it to make your teeth hurt!)
  • 3 tbsp. cocoa powder
  • 1 tbsp. plus 1 tsp. all-purpose flour
  • pinch salt
  • 1 cup plus 2 tbsp. milk

Directions:

  1. Combine sugar, cocoa, flour, and salt in a sauce pan. Add 1/4 cup of the milk and whisk briskly to form a smooth paste. Heat the remaining milk over medium heat until very hot. Remove from heat. Gradually whisk into cocoa mixture. Scrape sides and bottom of pot with rubber spatula, then set pot over medium heat. Cook and stir until gravy comes to a boil, scraping pot bottom and sides occasionally. When gravy comes to a full boil, reduce heat to a low boil. Boil and stir for 4 minutest. Remove from heat. Immediately add butter. Spoon over piping-hot open-faced biscuits with plenty of butter.
