Big John's Cajun Fried Oysters

Ingredients:

Directions:

  1. Drain oysters, reserving the liquid.
  2. Mix oyster liquid, eggs, hot sauce and milk.
  3. Mix cornmeal, cajun seasoning, cayenne and baking powder.
  4. Saute oysters in butter until edges curl.
  5. Remove from heat and let cool.
  6. Dip oysters first in liquid, then dredge in cornmeal mixture.
  7. Fry oysters in hot pepper oil for three minutes over medium heat, turning once, they are done when golden brown.
  8. Remove, drain on paper towels.
  9. Serve immediately.
