Better Than Libby's Pumpkin Pie

Ingredients:

  • 1 (15 oz) can libby's canned pumpkin (100% pumpkin not pumpkin pie mix)
  • 1 (14 oz) can eagle brand condensed milk (sweetended not evaporated)
  • 2 eggs
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 (9 inch) unbaked pie shells

Directions:

  1. Preheat oven to 425 degrees.
  2. Whisk ingredients in bowl until smooth and pour into pie crust. Bake 15 minutes.
  3. Reduce heat to 350 degrees. Continue baking for 30 to 45 minutes or until a knife inserted 1 inch from the crust comes out clean.
  4. Cool. Refridgerate for at least one hour before serving and serve with cool whip (optional).
