Better Than Egg & Veggie Curry Omlete

Ingredients:

  • 1/4 cup better'n eggs plus
  • 2 tbsp cheese
  • 1 tsp curry
  • 1 salt and pepper to taste

Directions:

  1. Simmer onion in water until translucent
  2. Add curry seasoning
  3. Add diced tomatoes, cook until softened
  4. Add chopped spinach to steam
  5. Add better than eggs
  6. Let eggs set up
  7. Add cheese, let it melt
