Ingredients:

Directions:

  1. Cooked chicken cubes or strips can be used.
  2. Mix together chicken, spring onion with the mayo and thousand island.
  3. Spring onion can be strong-leave out if you prefer.
  4. Salt and pepper if required.
  5. Chili or cayenne could also be used for a kick.
  6. Set this aside.
  7. Peel and quarter boiled eggs.
  8. Cook lardons until crispy; drain and cool. (Smoked or unsmoked can be used).
  9. Place salad items onto the plate (improvise here to your taste and appetite).
  10. Place chicken into the centre top with egg and crispy bacon.
  11. Enjoy this simple but tasty salad or use as a filler.
