Beet Cumin Salad

Ingredients:

  • 1 large or 2 medium beets
  • 1/2 tsp. sugar
  • 1/2 to 1 tsp. salt
  • 1/2 to 1 tsp. pepper
  • 1/4 tsp. cumin powder
  • 1 tsp. lime juice

Directions:

  1. In small pan, boil beets in water for 5 minutes; they will be quite firm;
  2. Grate or shred the beets;
  3. Combine in small bowl with dressing ingredients.
