Ingredients:

Directions:

  1. Fresh vegetables:
  2. In a large stock pot, add olive oil to cover bottom of pot
  3. Add onions, celery & garlic
  4. Add salt & pepper to taste
  5. Saute until vegetables are soft
  6. Meat:
  7. In a large saute pan, add ground chuck
  8. Add salt & pepper to taste
  9. Cook until meat is brown
  10. Combine sauteed vegetable & ground chuck in stock pot
  11. Add sliced muchrooms & diced tomatoes
  12. Defrost chopped spinach in microwave, & add
  13. Add remaining frozen vegetables; potatoes, carrots, corn, green beans, peas, & broccoli
  14. Add barley, pasta, basil & bay leaves
  15. Combine ingredients thoroughly
  16. Add enough beef brooth until all ingredients are covered
  17. Taste & add additional seasonings if needed
  18. Simmer for 2 hours, stirring occasionally
