Beef Liver With Onions

Ingredients:

Directions:

  1. Fry bacon until crisp.
  2. Place liver in a suitable bowl.
  3. Pour 3 cups boiling water over liver to blanch, drain and dry.
  4. Dredge in seasoned flour and saute in bacon fat until lightly browned on both sides.
  5. Lay in greased casserole.
  6. Cover with sliced onions.
  7. Sprinkle with salt and pepper.
  8. Add the 1/2 cup of hot beef broth or water.
  9. Crumble the crisp bacon over all.
  10. Cover and bake at 350 degrees F for 45 minutes.
  11. Serve with potatoes or rice to take advantage of the gravy.
