Bean-oat muffins

Ingredients:

  • 3/4 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 cup honey
  • 1/2 tsp vanilla
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup raisins (optional)

Directions:

  1. Preheat oven to 400 degrees.
  2. Puree beans with milk in a blender until smooth.
  3. Pour into a bowl and beat in egg, oil, honey and vanilla.
  4. Add the dry ingredients, mixing until just moistened.
  5. Stir in raisins.
  6. Spoon into paper-lined muffin cups, about 3/4 full.
  7. Bake for 15-20 minutes or until golden brown.
  8. Cool on wire rack.
  9. Enjoy!
