Ingredients:

  • 3 eggs
  • 2 1/4 cups sugar
  • 3 tsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1/2 tsp baking powder
  • 1 cup chopped nuts (optional)

Directions:

  1. Preheat oven to 350.
  2. Sift together all dry ingredients.
  3. Beat eggs, add sugar, oil, zucchini and vanilla.
  4. Combine both mixtures.
  5. Add nuts.
  6. Grease and flour 2 loaf pans.
  7. Bake 1 hour.
