Ingredients:

Directions:

  1. Cook bacon till crisp, drain on paper towels & set aside
  2. Wash potatoes & pat dry
  3. Cut 1/2 slices across each potato, taking care not to cut quite all the way through.
  4. Cut the onion in half & then into thin slices & place one in between each potato slice
  5. Place the butter in a bowl & add the Italian seasoning, pepper & the salt. Mix until well blended
  6. Dividing equally between the 4, spread the seasoned butter across the tops of the potatoes to ensure some will melt into each onion filled space.
  7. Crumple the bacon & sprinkle on the tops of each potato
  8. Wrap each potato in a big enough piece of foil to ensure a tight seal
  9. BBQ - cook potatoes on BBQ on Medium heat turning often so the butter doesn't burn & is distributed over the potatoes for about 45 - 60 mins or until tender
  10. OVEN - cook potatoes in 375 degree oven for about 1 1/2 hrs or until tender. Turn completely over once to distribute the butter over the potatoes.
  11. Open the foil carefully as the steam & butter will be hot
