Ingredients:

Directions:

  1. Heat the oil in a large pot over medium heat.
  2. Sweat the shallots and/or onions a bit
  3. Add the celery and garlic, cook til translucent.
  4. Add the smoked paprika, steak, and bratwurst. Cook until the steak is just browned.
  5. Blend in the miso.
  6. Add the tomatoes, vegetable juice, and chicken stock. Reduce heat, cover, and simmer about 15 minutes.
  7. Raise the heat until it nearly boils. Add the millet, reduce heat, cover and simmer about 20 minutes.
  8. Add the rice, cover and simmer about 15-20 minutes.
  9. Check how thick/runny your stew is. Millet really absorbs a lot of liquid, so add more vegetable juice, broth, or water as needed.
  10. Add the frozen mixed vegetables, okra, and wine. Simmer until the vegetables are heated through.
  11. Taste, add salt and pepper to your taste.
  12. Serve topped with fresh parsley or cilantro.
