Ingredients:

  • 2 (28 oz) cans chopped tomatoes
  • 1 (14 oz) can chopped tomatoes
  • 1 (14 oz) can corn
  • 2 (14 oz) cans black beans
  • 2 (14 oz) cans pinto beans
  • 2 small onions
  • 6 garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 tbsp chili powder
  • 3 tbsp tomato paste

Directions:

  1. Heat oil.
  2. Add onion and garlic; add green pepper when onion starts to soften.
  3. Add sweet potato, peeled and chopped.
  4. When onion begins to brown, bang in cans of beans/tomatos and spices.
  5. Heat until cooked; add water or broth or tomato paste as needed.
