Ingredients:

  • 2 3/4 cups sifted flour
  • 1 tsp salt
  • 1/4 tsp clove
  • 1 1/2 tsp cinnamon
  • 3/4 tsp nutmeg
  • 2/3 cup shortening
  • 1 1/3 cups sugar
  • 1 2/3 cups mashed bananas
  • 2 tsp vanilla

Directions:

  1. Sift flour, baking powder. baking soda, salt, and spices together 3 times. Cream shortening with sugar until fluffy. Add eggs and beat thoroughly. Add sifted dry ingredients and bananas alternately in small amounts, beating well after each addition. Stir in vanilla. Pour into greased and floured pans and bake at 350* for 35 minute Makes 2 (8 ) layers.
